About: Dr. Madhav Chaudhary

His areas of specialization include dairy technology and processing, with a strong focus on traditional Indian dairy products such as khoa-based sweets including Mohanthal. He has expertise in product development and value addition, shelf-life evaluation, packaging technologies, and food safety and quality assurance systems including FSSAI and ISO standards. His work also extends to advanced areas such as cryogenic freezing (IQF technology), functional and fortified food development, and dairy entrepreneurship, training, and extension activities.

Major research contributions / notable work

His major research contributions centre around the development, standardization, and optimization of traditional dairy products. Notably, his Ph.D. research on Mohanthal involved characterization, process optimization, and shelf-life evaluation, contributing significantly to scientific understanding and commercialization potential of this traditional sweet. He has also developed khoa jalebi dry mix, worked on whey protein-fortified products, and conducted studies on packaging and shelf-life enhancement. His recent work on Individual Quick Freezing (IQF) of paneer using liquid nitrogen represents an advanced technological contribution to the dairy sector. In addition, he is currently working on a research project titled “Process Optimization and Shelf-life Evaluation of Kheer using Aromatic Joha Rice,” focusing on preserving the unique flavour of Joha rice, optimizing processing parameters, and improving product quality and shelf-life through suitable packaging interventions. Importantly, his research on Mohanthal gained wider societal recognition and was featured in the Gujarati newspaper Divya Bhaskar (15 March 2023), highlighting its practical relevance and public impact.

Awards / recognitions

He has received several prestigious awards and recognitions throughout his academic and professional career. He secured 1st rank in the ICAR All India Competitive Examination (SRF-PGS) in 2015 and qualified ICAR-NET for Lectureship in 2014 and 2015. He was awarded the Prof. M.R. Srinivasan Memorial Award as the topper of his M.Tech program and also received merit certificates and institutional scholarships from ICAR-NDRI during his postgraduate and doctoral studies. Additionally, he has been recognized with Best Poster Award at an international conference and a 2nd Best Presentation Award at a national symposium, along with participation and recognition in numerous national and international conferences and training programs. He is also a life member of Association of Food Scientists and Technologists (India). Furthermore, he is actively serving as a reviewer for journals published by Springer Nature and Elsevier, and has also contributed as an editor for books published by Springer Nature, demonstrating his engagement in scholarly publishing and academic leadership.
